What makes this the best chicken quesadilla is our recipe for chipotle mayo – for this we simply mix our deliciously smoky Gran Luchito Chipotle Paste with mayo and then we add it onto the wrap to make this chicken quesadilla unbelievably moreish.
We like to serve our chicken quesadillas with a side of our fresh tomato salsa, Pico de Gallo, which is super easy to make and tastes amazing. If you haven’t got time to make it, you could serve it with our Gran Luchito Chipotle Salsa instead!

The easiest way is to take off the meat from a rotisserie chicken and shred with a couple of forks. But you can also turn chicken breasts into delicious shredded chicken. Shredded chicken is the best for quesadillas, as it sits flatter inside the quesadilla than cut chunks.
If you are simply heating up leftover cooked chicken, you can do this by adding it on top of your burrito wrap inside a heated frying pan, as we do in our recipe. Simply cooking your quesadilla is enough to heat through the chicken, without having to heat it up separately first. If you are cooking chicken breast from scratch, you will need to do this separately beforehand. Chicken breasts can be grilled in the oven and then shredded with a couple of forks.
